A crazy delicious chicken salad with a hint of wasabi spice, and the perfect addition of almonds, apple, celery and more! Sounds wild but tastes like your new favorite salad!
(Vegan chicken pieces can be substituted for 12-16oz of pressed firm tofu roughly chopped)
Ingredients
1/2 cup vegan mayo
1 tbsp wasabi
Salt and pepper
12oz prepared vegan chicken, chopped into chunks
1/4-1/3 cup diced onion
1/2 cup diced celery
2 tbsps diced green onion, plus more for garnish
1/3 cup chopped apple
1/3 cup slivered almonds
Lettuce of choice for cups (romaine, butter or iceberg work great)
Directions
Combine first 2 ingredients
Season with salt and pepper
Mix well
Add in your chicken, onion, celery, green onion, apple and almonds
Mix well
Refrigerate for 30 minutes to an hour
Remove from fridge
Fill lettuce cups
Garnish with green onions
Serve and enjoy
