I saw an award winning recipe for a Spam Monkey Bread and was inspired to recreate a vegan version. When I got my hands on OmniPork Luncheon I knew that would be the perfect spam alternative.
So this recipes is a sweet and savory Hawaiian inspired monkey bread. It’s one you’ll either really love or hate.
Ingredients
8.4oz OmniPork Luncheon or 8-10oz of vegan ham
20oz of canned pineapple chunks in juice, drained
1/2 cup Sugar
1 tsp cinnamon
2 tbsps of maple syrup
1 can of Pillsbury Sweet Hawaiian biscuits (8 biscuits)
3/4 cup melted butter
1/4 cup brown sugar
Oil
Directions
Preheat oven to 350
Heat a little oil in a non stick pan over medium high
Add in your Omni pork
Pan fry on each side for 3-5 minutes
Remove and cut into chunks
Place chunks in a medium bowl
Add in your pineapple and maple syrup
Mix well and set aside
In a large bowl add your sugar and cinnamon
Mix well
Cut each biscuits into 8 small pieces
Place small pieces into sugar bowl
Toss to coat
Place half your pineapple mix into well greased Bundt pan
Top with half your sugar biscuit pieces
Add remaining pineapple mix followed by biscuit pieces
Whisk in 1/4 cup of brown sugar to your melted butter
Pour evenly into your pan
Bake in preheated oven for 25-30 mins
Remove when golden
Let cool 5-10 minutes
Place serving plate on-top and carefully flip Bundt pan upside down so it places onto your plate
Serve and enjoy!
