Feel like having a hearty Italian dish without all the heavy carbs? These Zucchini Boats are exactly what you need. Super rich in flavor leaving you feeling very satisfied without the guilt.
(This recipe feeds 2 as a main dish, 4 as a side dish)
Ingredients
1 package of Beyond Meat Meatballs
2 large Zucchini's
1 cup of mozzarella shreds
20 oz jar Pasta Sauce of choice
Italian Seasonings
Salt
Pepper
Olive Oil
1/4-1/3 cup of Parmesan
2 tbsps. of Chopped Parsley or Chopped Arugula
Directions
Preheat oven to 350
Slice your zucchini's in half, length wise
Scrape out the inside
Spread evenly with olive oil
Sprinkle with a little salt, pepper and Italian seasonings
Place into preheated oven for 20-25 minutes until zucchinis are tender
Meanwhile, cook your meatballs according to directions
Once browned Add your tomato sauce to pan and simmer for 5-7 minutes until sauce is warm
Remove from heat to cool slightly
Once zucchini's are done remove from oven
Let cool slightly, 5 minutes or so
Place your meatballs into the zucchini boats
(There will be leftover sauce, great to serve on the side if anyone wants extra)
Sprinkle with mozzarella
Place under the broiler for 2 minutes until cheese has melted and starting to brown
Remove from oven and garnish with parmesan and chopped greens of choice
Serve with a side of any leftover sauce
