Calamari, as a non vegan you either hated it or loved it. I happened to love it so I knew I needed to make a cruelty free version. I was beyond thrilled with how this recipe turned out. The lightly floured and seasoned mushrooms fry up to the most perfect bite of deliciousness. Even if you didn't like Calamari i suggest giving this a go, it is THAT GOOD!
Ingredients
2-3 large King oyster mushrooms
1 8-10oz package of Enoki mushrooms
½ cup of flour
1 tsp of dried parsley
1 tsp of salt
½ teaspoon of garlic powder
Pinch of pepper
Lemon
Marinara
Oil for frying
Directions
Slice your kings mushrooms into ½ thick slices
Using a small knife cut a circle into each slice and remove the center
(Feel free to use the center in another recipe)
Repeat with remaining slices
Heat your oil in a small sauce pan
In a small bowl mix together your flour, parsley, salt, garlic powder and pepper
Place your king oyster rings into the flour
Toss around to evenly coat well with flour
Drop them into the hot oil
Allow to fry for roughly 5-7 minutes until golden brown and crispy* Remove and drain on paper towel
Repeat until all king oysters have been fried
Remove ½ inch bottom of enoki mushrooms (according to package)
Place into remaining flower, toss to evenly coat
Place into fryer, these should take 2-3 minutes until golden
Remove and drain on paper towel
Plate and serve with lemons and marinara sauce
*fryers and temperature may vary so just watch the fryer. Could take shorter or longer to brown.
