(This should make 16 football pastries)
Ingredients
1 1/2-2 cups of Prepared vegan chicken, finely chopped
1/2-3/4 cup of Buffalo Wing Sauce
1 cup of shredded vegan mozzarella
6oz of non dairy cream cheese
1/3 cup of chopped green onions or chives
1 tbsp vegan egg
2 sheets of puff pastry
1 tbsp melted butter
Directions
Preheat oven to puff pastry temperature
In a medium bowl combine the first 5 ingredients
Mix well, set aside
Roll out your pastry sheets
From each sheet cut 4-6 thin strips, set aside for later use (we will use those as design on footballs)
Cut out roughly 32 small football shapes
Take one football shape, spoon a small amount of your mixture into the center
Place another football shape on top
Using a fork pinch the edges to seal
Repeat with remaining football shapes and mixture
Once shapes have been formed lets decorate the footballs
Brush each football with a little butter
Using your thin strips and pastry scraps form them into sixteen 2-by-1/8-inch strips and sixty four 1-by-1/8-inch
Arrange the long strips lengthwise across the center of each football then arrange 4 short strips crosswise over the long strips to form the laces of a football.
Carefully brush the tops of the ovals with egg mixture. Trying not to mess with the laces
Bake in preheated oven for roughly 20-25 minutes until golden
Serve with Vegan Blue Cheese or Ranch
