Vegan Blue Cheese Wedge Salad Crostini



Follow your heart has released a new Blue Cheese and it is outstanding! First thing that came to my mind to make was a wedge salad. So that's what we did hear but took it to another level by placing it on a crostini! This is a great way to serve and enjoy a wedge salad without a fork!


Ingredients

2 cups of iceberg shredded lettuce

1 cup of chopped tomatoes

1/3 cup of diced red onions

1/3 cup of diced avocado

4-5 pieces of vegan bacon, cooked and chopped (we used all vegetarian inc.)

1/3 cup of Follow Your Heart Vegan Blue Cheese, plus 1-2 tbsp for garnish

1-2 tbsp of Follow Your Heart Blue Cheese dressing

Fresh cracked pepper

1 French baguette, sliced

Olive Oil

Chives, chopped






Directions

Preheat oven to 350

Brush your baguette slices with olive oil

Place onto baking sheet and bake until golden, roughly 10 minutes

In a medium bowl add your first 7 ingredients

Mix well

Season with pepper

Let bread cool

Top each crostini with a little of salad mix

Sprinkle each with remaining blue cheese

Garnish with chives

Serve and enjoy!
