A delicious gourmet dinner that's simple to make.
Perfectly cooked vegan chicken coated in a sweet and savory glaze served over an orzo pasta with tomatoes, kale, garlic, and feta. Then drizzled with a balsamic glaze and topped with freshly chopped cucumber and parsley. I'm drooling just writing about it.
Balsamic Chicken Ingredients
1/4 cup of balsamic vinegar
1 rounded tbsp of Dijon Mustard
1 tbsp of crushed garlic
1 tbsp of olive oil
2 tbps of maple syrup
Pinch of salt and pepper
10-12 oz of Vegan Chicken Breasts, thawed (we used All Vegetarian)
1 tbsp of butter
Oil for sautéing
Vegetable Orzo Ingredients
1 bunch of kale, stems removed and chopped
2 cups of cherry tomatoes
2 tbsp of crushed garlic
2 cups of cooked orzo
2 tbsp of white balsamic vinegar
Salt and pepper
Olive Oil
Ingredients for plating
Follow Your Heart Feta
2 Persian cucumbers, diced
1 bunch of flat leaf parsley, chopped
Balsamic Glaze
Balsamic Chicken Directions
In a large bowl whisk together the first 6 ingredients
Chop your thawed chicken into bite size pieces
Place into prepared sauce and marinate in the fridge for 30 minutes to 1 hr. (the longer the better)
Heat a little oil in a large frying pan over medium high heat
Add in your chopped marinated chicken (chicken should have soaked up the marinade but any liquid leftover can go into the pan as well)
Cook for roughly 20 minutes flipping every few minutes
Add in your butter the last few minutes
Once browned remove from heat
Vegetable Orzo Directions
In a large frying pan heat 2 tbsp olive oil over medium high heat
Add in your tomatoes
Cook until blistered, roughly 5 minutes
Add in your chopped kale and garlic
Cover and cook for 5 minutes
Remove cover and sauté for another 5 minutes until kale is starting to wilt
Stir in your cooked orzo
Turn off heat
Mix well
Add in your white balsamic vinegar
Season with salt and pepper
Plate
Place a generous amount of vegetable orzo onto plate
Top with a generous sprinkle of feta
Place a few pieces of balsamic chicken on top
Drizzle with balsamic glaze
Top with chopped cucumber and parsley
Serve and enjoy!
