What a beautiful and delicious savory tart. Perfect for brunch, lunch, dinner or just a snack.
Ingredients
1 round vegan friendly pie dough (we used one from Simple Truth)
2 medium-large heirloom tomatoes, sliced (we used red and green)
1-2 garlic cloves, sliced very thin
2 tbsps vegan butter softened
4-5 slices of herbed cheese (provolone, mozzarella or gouda would work as well)
1/4 cup of nutritional yeast
1 tbsp of fresh parsley, chopped
1 tbsp of Just vegan egg
Salt
Shredded Vegan Parmesan
Directions
Preheat oven to 400
Roll your dough onto prepared baking sheet
Spread the center with your softened butter, leaving 1-2 inch rim
Top with cheese slices
Sprinkle with nutritional yeast
Add your slices tomatoes and slices garlic
Season with salt and parsley
Fold in the outside to form your galette
Brush the outside crust with your vegan egg
Bake in preheated oven until golden, roughly 25-30 minutes
Remove from oven and season with salt and a little parmesan
Serve and enjoy!
