This meatloaf is made using all veggies and it’s one of the most delectable dishes I have ever had. You won’t miss the meat or the meat substitute!
Ingredients
1/2 rounded cup ketchup
1/3 cup brown sugar
2 tbsps yellow mustard
16oz mushrooms, chopped
2 tbsps ketchup
1 bouillon cubes
3 tbsps butter
Salt and pepper
1/2 onion, diced
3/4 cup diced celery
1/3 cup walnuts
1 cup cooked lentils
1/3 cup water
1 rounded cup rolled oats
3/4 cup panko bread crumbs
2 tbsps soy sauce
1 tsp garlic powder
1 vegan egg substitute
1/2 cup cheese shreds of choice Chopped Parsley
Directions
Mix together the first 3 ingredients
Set aside
Heat a large pan over medium heat
Add in your butter
Once melted add in your mushrooms
Cook for 10 minutes until cooked down
Add in your onion and celery and continue to cook for 5-7 more minutes
Add in 1 tbsp ketchup and bouillon cube
Cook until bouillon cube is mixed
Turn off heat
Preheat oven to 375
Into a blender add your walnuts, lentils, mushroom mix and water
Blend until slightly creamy and chunky
Place mixture into a large mixing bowl
Add your oats, breadcrumbs and soy sauce
Add 2 tbsps of ketchup mix
Add garlic powder and season with salt and pepper
Add in your cheese and egg
Mix well
If mixture is too wet add more oats and breadcrumbs
You want it to be slightly thinner than cookie dough but not much
Place into a prepared loaf pan
Spread top evenly with remaining ketchup mix
Cover and bake in preheated oven for 30 minutes
Remove cover and bake for an additional 20-30 minutes until set
Carefully remove from oven and cool
Garnish with parsley
Cut into slices, serve and enjoy!
