This is hands down, the best stuffing you'll ever taste! It's packed with flavor. I make it every year and its always a huge hit!
Ingredients
6 Vegan Croissants (or you can use 3-4 packages of Crescent rolls, cooked 1 day before)
2 cups of cubes day old bread
12-16oz of Vegan Ground Sausage
2 cups chopped celery
2 tablespoons minced garlic
1 sweet onion, chopped
2 tbsp of freshly chopped thyme
2 tbsp fresh chopped sage
3-2 cups of vegetable broth
1 teaspoon of garlic salt
½ rounded cup of earth balance butter
Directions
Preheat oven to 350
Break both breads into ½-1 inch chunks
Place onto a large enough dish and place into oven
Bake for 10-15 minutes, remove and set aside
Heat oven to 375
In a large sauce pan melt your butter
Add in your onion and celery
Cook for 10 minutes until softened
Crumble in your sausage, allow to brown 5-7 minutes
Add in your garlic
Cook 1 minute
Stir in your herbs and garlic salt
Mix well
Stir in your bread 1 cup at a time
If your pan gets too full pour 1/2 cup of veggie broth in
Continue until bread is mixed in
Stir in your remaining veggie broth, starting with 1/2 cup
Add more broth if needed
Mix well
Place into a large greased casserole dish
Bake for 45-60 minutes
Stirring at least once half way through
Let cool 5 minutes

I have never made stuffing before and made this for Thanksgiving yesterday and it was so delicious! I have family members who hate celery so I subbed carrot and leek. Everyone raved about it! Thank you for this recipe!!
