The Best Scalloped Potatoes




I have always loved scalloped potatoes but have been hesitant to make them. But I'm so glad I gave them a shot. These are some of THE BEST Scalloped Potatoes I have ever had and they easy to make!


Ingredients

Roughly 3 lbs of potatoes, sliced thin ( I prefer the small golden potatoes)

1/4 cup of Vegan Butter

1/4 cup of flour

1/3 cup of diced onions

2-3 garlic cloves, minced

2 cups of non dairy milk

1 cup of vegan chicken or vegetable broth

Salt and Pepper

Roughly 1 cup of vegan mozzarella shreds

1/3 cup of chopped chives




Directions

Preheat oven to 350

Heat a large pot to medium

Add in your butter

Once it starts to melt add in your onion

Cook for 5 minutes

Add in your garlic and cook for 2 minutes

Sprinkle in your flour

Whisk until paste forms

Season with salt

Add in 1 cup of non dairy milk and 1/2 cup of broth

Whisk until blended well

Then add in remaining milk and broth

Mix well

Season with pepper

Cook until thickened

Remove from heat

Grease a 9x13 inch baking dish

Place down 1 single layer of your thinly sliced potatoes

Season with salt and pepper

Top with 1/3 of your sauce

Add a 2nd layer of potatoes, salt and pepper and 1/3 of sauce

Add your final layer of potatoes and remaining sauce

Sprinkle with your shredded mozzarella

Cover and bake in oven for 40 minutes

Remove cover and bake for an additional 20 minutes

If you want it more brown on top, place under the broiler for 5 minutes

Remove and let cool 5 minutes

Garnish with chopped chives

Serve and enjoy!
