Trust me when I say this is hands down THE BEST potato salad. The key ingredients here are dijon mustard and fresh dill.
Ingredients 1/2 cup vegan Mayo
1/3 cup Dijon mustard
3 tablespoons red wine vinegar
1/3 cup sweet relish
1/4 cup freshly chopped dill
5 Large Red Potatoes 1/2 cup red onion, chopped 2 cups chopped celery Salt and pepper
Directions Wash and cube your potatoes In a large pot with water, bring to a boil and cook until tender Remove from heat and drain In a large bowl combine first 3 ingredients Whisk until creamy
Stir in your relish and dill Mix well Add your warm Potatoes, Celery and Onion
Season with salt and pepper Mix well Place in refrigerator for at least 2 hours before serving
Serve and enjoy!
