Slow Cooker BBQ Pulled 'Pork'



There is so much flavor in this Vegan BBQ Pulled Pork. The main ingredient used here was Jackfruit but we added a little something special that really brought this dish over the top, Vegan Jerky and Rice Paper! Wow, it added so much texture and flavor. And it all came together easily in a slow cooker. Check out the recipe below, give it a shot and let me know what you think!


Ingredients

2 tbsps apple cider

3 tbsps Liquid aminos

1 tbsp garlic powder

3/4 cup water

1/3 cup brown sugar

3 tbsp mustard

2 tsp of paprika

Splash of liquid smoke

2-20oz cans of Young Green Jackfruit in Brine, drained

1 20oz bottle of bbq sauce, we love Kinders

2-3 sheets of Rice Paper (This becomes the 'fat' to the me-eat)

Biscuits or buns of choice

Salt and Pepper

Directions

Add the first 10 ingredients to your crock pot/slow cooker

Add 1/2 of your vegan jerky

Add in most all of your bbq but reserve 1/3 cup for later

Mix everything together to fully coat the jackfruit

Cover and cook on high for 4 hours

During the last 30-45 minutes remove lid

Using two forks shred your jackfruit REALLY well

You don't want any large clumps, everything should be all shredded finely

Add in your remaining bbq sauce and jerky

Cut/slice your rice paper into 2-3 inch thin strips

Place into crock pot

Season with salt and pepper

Mix well

Cover and cook for remaining 30-45 minutes

Let sit in crockpot after its done for 3o minutes to an hour

Cook biscuits according to directions

When ready to plate, heat a cast iron skillet with a little oil over medium high heat

Once heated add a few handfuls of your pulled pork

Pan fry for roughly 8 minutes until starting to brown

Place a large spoonful on your biscuits or buns

Serve and enjoy!



We used store bought biscuits and cooked them in the air fryer.
