Rugelach is a traditionally a pastry filled with sweet ingredients. Over time people have experimented and created savory rugelachs. And me being a savory over sweet person I was very happy to start seeing them. So I decided to whip up my own batch.
These are filled with delicious caramelized onions, balsamic vinegar, cheese and then topped with everything bagel seasoning. Are we drooling yet?
Ingredients
1 vegan friendly pie crust dough, we used immaculate baking
2 sweet onions, sliced thin
2 tbsp of balsamic vinegar
1 tsp garlic salt
1 tsp garlic powder
1/2 cup of shredded mozzarella, we used Follow Your Heart
2 tbsp of everything bagel seasoning
1 tbsp Just vegan egg, or melted butter
Vegetable Oil
Directions
In a large frying pan add roughly 1 tbsp of vegetable oil
Heat to medium high
Add in your onions and toss to coat in oil
Turn heat down to medium
Cook, turning often, until golden and caramelized (this can take anywhere from 20-60 minutes so just be patient)
Once golden and caramelized add in your balsamic vinegar
Cook until thickened
Add in your salt and garlic powder
Add in your cheese
Cook until melted
Turn off heat
Remove onions from pan and let cool
Pre heat oven to 350
Place your ready to bake dough on working space (most dough requires sitting at room temperature before using, check directions)
Spread your onion mix evenly on your pie dough
Cut out 8-10 triangles, depending on how big you want them
(you can even get 16 triangles)
Roll up each triangle into crescent shape
Place onto prepared baking sheet
Brush the top of each with your just vegan egg or butter
Sprinkle tops generously and evenly with your everything bagel seasoning
Bake in preheated oven for 25-30 minuted until golden
Remove and let cool
Serve and enjoy!
