Irish Nachos is a dish inspired by Irish themed bars that serve up Nacho Toppings on top of Potatoes rather than Tortilla Chips. And today we bring you two of some of my favorite foods, Waffle Fries and Reuben flavors.
Ingredients
20oz bag of Frozen Waffle Fries, cooked according to directions
8oz Tofurky seasoned plant based chick'n pieces
1/4 cup of Red Wine Vinegar
14.5 oz can of beets, juice only
1 tsp pepper
Roughly 8 slices of Non dairy Swiss or Provolone, cut into fours
3/4 cup Vegan Mayo
1/3 cup of ketchup
1 tbsp of pickle juice
1 cup sauerkraut
Directions
In a small bowl with a lid add your vinegar, beet juice and pepper
Mix well
Add in your chick'n pieces
Mix well to make sure every piece of chick'n is in liquid
Cover and marinate over night
In another small/medium bowl add your vegan mayo, ketchup and pickle juice
Whisk until mixed together
Cover and refrigerate until ready to use
Lets make the nachos
Preheat oven to 425
Take your prepared waffle fries and place them into a cast iron skillet or baking dish
Top with your cheese slices
Drain your chick'n pieces from liquid and and place on top of cheese
Place into oven and bake until cheese has melted, roughly 10-15 minutes
Remove from oven
Top with you sauerkraut
Drizzle with your mayo and ketchup mix
Serve immediately
