All things Reuben, thrown together in a baking dish and baked until warm, crispy and creamy!
Ingredients
1 cup vegan Mayo
1/4 cup relish
1/4 cup ketchup
Splash of hot sauce
Roughly 6-8 slices of rye bread, cubed
5-10oz of vegan pastrami cut into small pieces
2 cups of sauerkraut, drained
7oz vegan mozzarella shreds
Directions
Preheat oven to 350
In a small bowl add your first 4 ingredients
Whisk until mixed well
To a bread baking dish add your bread cubes
Evenly top with your vegan pastrami
Drizzle with sauce, I like to keep a little sauce for serving
Top with your sauerkraut and cheese shreds
Bake in preheated oven for 20-30 minutes
Remove and let lit 5 minutes
Serve and enjoy!
