Perfect hearty and fresh salad to make all summer long.
Ingredients
1/3 cup lemon juice
1 garlic clove, minced
1/4 cup red wine vinegar
1 tbsp. maple syrup
1/4 cup of olive oil
Salt and pepper
1 rounded cup diced cucumbers
1 rounded cup of diced cherry tomatoes
1/2 cup chopped celery
1/2 red onion diced
1 cup of chopped purple cabbage
1 red bell pepper, diced
1 rounded cup of finely chopped flat leaf parsley
1-2 avocados diced
2 cups cooked and cooled Quinoa
Directions
In a small bowl whisk together the first 5 ingredients
Season with salt and pepper, set aside
In a large bowl add remaining ingredients
Mix well
Stir in your dressing
Season with more salt and pepper if needed
Marinate in the refrigerator for 30 minutes before serving
Serve and enjoy!
