A sweet take on your traditional bruschetta using peaches! We used Kite Hill whipped ricotta. But you can use vegan cream cheese, ricotta, whipped tofu or even a cashew based cream.
Ingredients
8oz chopped cherry tomatoes
1/2 cup chopped white peaches
1/2 cup chopped yellow peaches
2 tbsp minced garlic
2 tbsps cup olive oil
2-3 tbsps white balsamic vinegar
Tsp salt
Handful of freshly chopped basil
Baguette
Kite bill whipped ricotta
Balsamic glaze
Vegan butter
Directions
Preheat oven to 350
Slice your baguette
Spread one side of each slice with your butter
Place into baking sheet
Bake in preheated oven for 10-15 minutes
Remove and cool slightly
In a large bowl add your tomatoes, peaches, garlic, olive oil, vinegar and salt
Mix well
Gently fold in your basil
Spread your toasted baguette with whipped ricotta
Top with your peach bruschetta
Drizzle with balsamic glaze
Serve and enjoy!
