A delicious Mediterranean Salad with Farro. Farro is a whole-grain wheat that is high in protein and high in fiber. It has a nutty flavor, and a chewy texture and makes a great high nutrient ingredient in so many dishes. Today we are adding it into a fresh and beautiful salad!
Ingredients
3 Tbsps Olive Oil
3 Tbsps Red Wine Vinegar
Juice from 1 lemon
1 Tsp Garlic powder
Salt and pepper
1.5 cups of cooked and cooled farro
1/2 red onion, diced
1 cup chopped cherry tomatoes
1-2 cups of chopped cucumbers
1/2 cup of chopped roasted peppers
1/3 cup of chopped black olives
1/3 cup chopped fresh parsley
1 cup of vegan feta crumbles
Directions
In a small bowl add the first 4 ingredients
Season with salt and pepper
Whisk together and set aside
In a large bowl add the rest of the ingredients, minus the feta
Then add in your dressing
Mix well
Carefully toss in your feta crumbles
Season to taste with salt and pepper
Refrigerate for 1 hr
Serve and enjoy
