Perfect bite sized potatoes loaded with beans and cheese and then topped with fresh guacamole from Good Foods.
Ingredients
1.5 lb of baby dutch yellow potatoes
3/4 cup of vegan friendly refried beans
1/2 cup of vegan friendly cheese shreds
1 tbsp vegan butter, melted
Salt and pepper
Good Foods Chunky Guacamole
Directions
Bring a large pot of salted water to a boil
Add in potatoes and cook until tender, not mushy
Drain from liquid and let cool
Preheat oven to 425
Once potatoes are cooled, slice in half
Carefully remove the meat from the potatoes and add to a medium bowl
Mash potatoes with melted butter
Mix in your beans and cheese, and season with a little salt and pepper
Mix well
Add spoonful of mix to your potatoes
Place onto baking sheet
Bake in preheated oven for roughly 10-15 minutes
Remove from oven and place onto serving platter
Top each potato with a spoonful of guacamole
Serve and enjoy!
