Loaded Breakfast Sandwich




Everything we love about breakfast served in a sandwich. This sandwich was inspired by this restaurant I used to live by in DTLA called eggslut. I never actually tried the sandwich but would always see the lines for people to get one. So I thought I’d try and create a vegan version.


(This recipe make two breakfast sandwiches. Simple double ingredients to make 4 sandwiches.)


Ingredients

1/2 cup of Follow Your Heart Vegenaise 2 tbsps of Dijon mustard 1 tbsp of maple syrup

1 package of Beyond Meat Breakfast Sausages, thawed

1 bottle of JUST egg

2-4 slices of Follow Your Heart American cheese

2 cups of frozen tater tots, thawed 

1 vegan egg (you can use follow your heart or bobs redmill)

Salt and Pepper

2 buns of choice

2 tbsps of chopped chives

Oil of choice



Directions

Whisk together the first 3 ingredients

Place in refrigerator until ready to use

Take 3 of your thawed beyond sausage patties and combine to make one large patty, the size of your bun 

Repeat with remaining 3 patties

Heat a little oil in a skillet or cast iron pan over medium high heat

Add in your sausage patties

Cook on each side for roughly 2-3 minutes until browned

Remove and cover to keep warm

Mash your thawed tater tots and mix in prepared vegan egg

Season with salt and pepper

Mix well and form into two patties the same size as your sausage patties

Add more oil to pan and heat over medium high, enough oil to generously coat the pan

Add in your tater tot patties

Cook on each side for roughly 3 minutes until browned

Carefully remove and drain on paper towel 

Cover to keep warm

Prepare you just egg, scrambling in pan until desired consistency

Once scrambled eggs are almost done season with a little salt and pepper

Once scrambled eggs are done turn heat to low

Add in your cheese slices and cover 

Once cheese has melted remove the cover and turn off the heat

Sprinkle with chopped chives


Let’s build our sandwiches

Spread a generous amount of you prepared sauce on your bottom and top bun

Place your hash brown patties on top of your bottom bun

Top with sausage patty

Then carefully spoon out a generous amount of scrambled egg, cheese and chives

Place on top of sausage patty

Add your top bun

Repeat with remaining ingredients to build your second sandwich

Serve and enjoy!
