Delicious lemon and blueberry muffins perfect for the spring time. They’re fresh and easy to make using vegan friendly lemon cake mix!
Ingredients
1/4 cup melted vegan butter
1/2 cup sugar
1/2 tsp cinnamon
1 cup flour
1 box of vegan friendly lemon cake mix, we used Duncan Hines
3/4 cup of just vegan egg
1 cup water
1/3 cup of vegetable oil
1-2 cups blueberries
1 tbsp lemon zest
Directions Preheat oven to 350 In a medium bowl mix together the first 4 ingredients until you get a crumble like texture Set aside In a large bowl add your vegan box cake mix Add in your just vegan egg, water and oil Mix until creamy Brush your mini muffin pan with oil or vegan butter Pour your muffin mix into pan Top each muffin with your crumble Bake in preheated oven for 20-25 minutes until golden and set Remove and let cool 5 minutes Remove from pan Serve and enjoy
