We all love having a grilled cheese with tomato soup. So why not combine the two to make this delicious casserole.
Ingredients
Sourdough bread, sliced (Or your preferred bread, just make sure its hearty and thick)
Vegan cheese slices
1-2 cups vegan Parmesan
1/4 cup vegan egg
2-3 cups tomato soup
1/4 cup nutritional yeast
Salt and pepper
Fresh basil
(The amount of bread and cheese depends on size of your bread. We used a small sourdough loaf in a 9x13 baking pan. So we had 12 slices of bread to make 6 sandwiches, that fit into the pan)
Directions
Toast your bread
Preheat oven to 350
On one side of bread add cheese slices
Top with a spoonful of vegan Parmesan
Add top bread slice
Place into baking pan
Repeat with remaining slices
In a large bowl add you vegan egg
Pour in your tomato soup
Add nutritional yeast
Season with salt and pepper
Whisk well
Pour over sandwiches into the pan
Sprinkle top with more vegan Parmesan
Bake in preheated oven for 45 minutes
Remove and top with fresh basil
Serve and enjoy!
