A delicious, hearty and easy Chili placed on top of Frito chips and dolled up with the fixings to make the perfect Frito Chili Pie! Great to serve at parties!
Ingredients
2 tbsp vegan butter
1 onion, diced
16oz of Vegan Ground Meat, we used Beyond Meat Beyond Beef
2 tbsps Cumin
1/2 tbsp chili powder
1 tsp garlic powder
2 tbsp tomato paste
1 tbsp sugar
Salt and pepper
14.5 oz can Pinto Beans
14.5 oz can of Kidney Beans
30oz can of diced tomatoes
1 beefless cube
1 cup water
1/2 cup of vegan cheese shreds Single bags of Fritos
Toppings: Diced onion, vegan cheese shreds, vegan sour cream, jalapenos
Directions
In a large stock pot melt your butter over medium heat
Add in your onion
Cook for 5 minutes
Add in your vegan ground meat
Crumble and cook until starting to brown
Add in your seasonings (cumin, chili powder, garlic powder, sugar and tomato paste)
Season with salt and pepper
Mix well
Add in your beans and tomatoes
Mix well
Add in beefless cube and water
Mix
Cover and cook for 10-15 minutes
Remove lid and stir
Add in your cheese shreds
Mix
Cook until melted
Turn off heat and let sit 5-10 minutes to thicken
Prepare your Frito Chili Pie
Cut open chip bags
Add a few spoonfuls of chili on top
Top with diced onion, shredded cheese, sour cream and jalapeno
Serve and enjoy!
