Easy Thai Chicken Pasta Salad



A delicious and simple salad that’s hearty and packed with flavor.


Ingredients

8oz vegan chicken pieces, cooked and cooled

12oz vegan pasta, cooked and cooled

1-2 cups rounded cup of chopped cucumbers

3/4 cup shredded carrots

1 cup chopped purple cabbage

1/2 cup of chopped mini sweet peppers

1/2 cup of chopped cilantro plus more for garnish

Dressing

1/2 cup peanut butter

1/3 cup of rice vinegar

1/4 cup of soy sauce

1/4 cup of brown sugar

1 tbsps minced garlic

1 tbsps minced ginger

2 tbsps sriracha

3 tbsps lime juice

Lime Wedges for serving


Directions

Combine all ingredients for the dressing in a medium bowl

Whisk until creamy

(You can also blend the dressing if you’d like)

Refrigerate until ready to use

In a large bowl add your pasta, vegan chicken and veggies

Pour in 3/4 of your sauce, reserve some for serving

Mix well

Garnish with cilantro

Serve with lime wedges

Enjoy

This salad be made ahead of time and refrigerated until ready to serve!
