Easy Rugelach

A Rugelach is a filled pastry product originating in the Jewish communities of Poland. The crescent-shape filled pastry was originally made with yeast dough and filled with fruit jams, poppy seed paste or nuts.


The Rugelach we made here is a delicious sweet rugelach with pecans and apricot.




Ingredients

1 refrigerated pie crust dough, softened as directed on box (immaculate is vegan)

3 tbsp. cream cheese, at room temperature and whipped with spoon

1/2 tsp cinnamon

1/2 cup of finely chopped pecans

3 tbsp. sugar

1 rounded tbsp apricot preserves

1 tbsps just vegan egg, or vegan butter mixed with a sprinkle of cinnamon


Directions

Preheat oven to 400

Thaw pie sheet according to directions

Mix together your cream cheese and cinnamon

Roll out your pie crust

Spread your cream cheese over the pie dough

In a medium bowl combine your apricots, pecans, sugar, and cinnamon

Mix well

Spread your sugar and apricot mix on top

Roll up and then cut into roughly 3/4 inch pieces

Place on top prepared baking sheet

Brush tops with just egg or butter

Bake in preheated oven for 15-20 minutes
