I have been wanting to make a French Onion Soup for quite some time now but I always thought it would be difficult. This recipe proved me wrong. It was very easy to make and absolutely delicious!!!
This recipe makes 2 large bowls or 4 small bowls, double the recipe to feed more people.
Ingredients
1 stick (4oz) vegan butter
2 onions sliced
2 Tbsp crushed garlic
2 Tbsp flour
5 cups vegetable stock
1 beefless cube
1/3 cup soy sauce
1 tbsp freshly chopped thyme plus more for garnish
Baguette bread sliced
1/3 cup vegan shredded mozzarella
Sliced vegan provolone
Directions Heat a large stock pot to medium Add in your butter Once melted add in your onion Cook, stirring often until caramelized Add in your garlic and cook for 2 minutes Whisk in your flour Add in your fresh chopped thyme Add your beefless cube Slowly add in your vegetable stock, 1 cup at a time Once all the
broth is added, stir in your soy sauce Season with salt and pepper Bring to a soft boil Cook for 10 minutes Turn off heat Taste and season to liking, if needed Place oven friendly bowls onto baking sheet Ladle soup into bowls Sprinkle top of soups with cheese shreds Place sliced baguette onto each bowl to cover the soup Top bread with sliced cheese Place under the broiler until cheese has melted Remove and top with remaining thyme Serve and enjoy If you don’t have oven friendly bowls you can toast your baguette in the oven and then add cheese on top and cook Until melted and then add to the top of your soup bowls
