The easiest most delicious snack or side dish. Made with cucumbers, hummus, tomatoes and vegan feta! Can’t believe I haven’t made these sooner! Ingredients 4-6 Persian cucumbers, sliced in half
Store bought or homemade Hummus
1-2 cups of chopped cherry tomatoes
Salt and pepper
1/4 cup of red wine vinegar
Vegan feta
Parsley, chopped for garnish
Directions
In a medium bowl add your tomatoes and vinegar
Season with salt and pepper
Mix well and set aside
Slice your cucumber in half lengthwise
Scoop out the pulp
Spread your cucumber with hummus
Top with your tomato mix
Sprinkle tops with feta
Garnish with parsley
Serve and enjoy!
