A rich and delicious one pot meal that comes together in less than 30 minutes! It’s a pasta that will have you licking the bowl clean, I certainly did!
Ingredients
2 tbsps vegan butter
8oz vegan chicken, we used daring foods
1 tbsps Italian seasonings
1-2 tsps garlic salt
8oz sundried tomatoes in oil, oil drained*
2 tbsps minced garlic
8oz vegan cream cheese
2-3 cups non dairy milk
12-16oz of cooked pasta (less pasta will give you a saucier finished product)
1 tsp crushed red pepper
1 tsp garlic pepper
2-3 cups spinach
1/2 cup reserved pasta water
1/3-1/2 cup of shredded vegan Parmesan
*it is great oil so don’t throw it out, you can use it in another recipe!
Directions
Heat a large deep pan to medium heat
Add in your butter
Once melted add in your vegan chicken
Cook for 6-8 minutes
Add in your Italian seasonings and garlic salt
Cook for an additional 3-5 minutes
Add in your sun dried tomatoes and cook stirring often for 3-5 minutes
Add in your garlic and cook for 2 minutes
Add in your vegan cream cheese
Using spatula bread apart cream cheese and mix until melted
Add in your non dairy milk, 1 cup at a time
Cook until heated
Season with crushed red pepper and garlic pepper
Add in your pasta
Mix well
Add in your spinach leaves
Mix and slowly add in pasta water
Mix well
Turn off heat
Add in your vegan Parmesan and mix
Serve immediately and enjoy!
