Today we are making these delicious and easy to make chicken flautas. We are cooking them in the air fryer for an easy clean up. But you can easily fry or bake them.(Directions at the end)
Ingredients
8-12 oz of vegan chicken pieces (I like to cook them in a little vegan stock and let them soak for a bit)
1 1/2 rounded cups of vegan cheese shreds
1/2 cup of green Chile, we used 505 South Western Green Chile Sauce
Small to Medium sized Flour Tortillas
Pico del Gallo, MsVegan Pico recipe below
Vegan Sour Cream
Lettuce
Vegan Feta Crumbles
Directions
In a medium bowl add the first 3 ingredients
Mix well
Place one tortilla onto working space
Place a little of the chicken mix onto the tortilla
Carefully roll up tightly
Place seam side down onto air fryer sheet or basket
Spray with cooking spray/oil
Air fry at 375 for roughly 8-10 minutes, check on them halfway to make sure they're getting golden all the way around (air fryer temps may vary)
Remove and let cool for 2-3 minutes
To plate:
Add a little shredded lettuce to plate
Top with flautas
Drizzle with vegan sour cream
Add a spoonful of pico de Gallo and sprinkle with feta
Serve and enjoy!
Oven directions:Preheat oven to 375. Place stuffed and rolled tortillas onto a greased baking sheet, seem side down. Spray or brush with oil. Bake in preheated oven for 15-20 minutes until golden. Remove and serve.
Deep fry directions: Heat oil in a large, heavy saucepan or deep-fryer. Secure tortillas with a toothpick. Carefully place stuffed and rolled up tortillas into hot oil. Cook turning once until golden on all sides. Remove and drain on paper towel.
Ms Vegan Pico
3 tomatoes, diced
1/2 red onion diced
1/4-1/2 cup cilantro, as much as you like
1 lemon, juiced
Garlic Salt
Pepper
Directions:
Mix together all ingredients
Let marinate for 15 minutes
Add more salt or lemon if needed for your taste
(If you want it spicy just add in some diced jalapeños)
