Easy Banana Bread Pudding

A delicious, easy to make bread pudding with banana and cookie butter! Great for brunch or even dessert!


Ingredients

1 loaf of day old bread (We used French bread)

12oz of Just Liquid Vegan Egg

2 cups of non dairy milk (vanilla flavored works great)

1/3-1/2 cup sugar

1/4-1/3 cup of Biscoff Cookie butter ( you can also use regular peanut butter or omit it all together)

1 tsp cinnamon

2 bananas, sliced

1/3 cup of brown sugar


Directions

Preheat oven to 350

Cut your loaf of bread into cubes and place into a greased 9x13 baking pan

In a large bowl add your vegan egg, non dairy milk, cinnamon, sugar, and cookie butter

Mix well until creamy

Pour over your bread cubes

Using your hands mix well so bread is evenly coated

Sprinkle top of bread with brown sugar

Bake in preheated oven for 45 minutes until golden and set

Remove and cool for 5 minutes

Slice and serve warm with maple syrup or Ice Cream!
