A beautiful croissant filled with vegan egg, sausage, peppers, onions, cheese and tomatoes then baked to a perfect golden crunch.
Ingredients
4 Vegan friendly Croissants, we used the ones from Whole Foods
18-22oz of Vegan Egg Liquid, we used Just Egg
1/2 onion, diced
3-4 small sweet peppers, sliced
1 cup of sliced cherry tomatoes
7.4oz of Beyond Meat Breakfast sausage
Garlic Salt
Pepper
1-2 cups of Shredded Vegan Mozzarella Vegetable Oil
Green onions or chives, chopped
Directions
Preheat oven to 375
Heat a little oil in a non stick pan over medium high heat
Add in your onion
Saute for 2-3 minutes
Add in your tomatoes and peppers
Saute for 2-3 more minutes
Add in your beyond sausage
Cook on each side for 1 minute to soften
Using your spatula roughly chop sausage into small pieces
Cook for 2-3 more minutes
Remove from pan
Return pan to heat
Add in your just egg
Cook until scrambled
Add in your sausage and pepper mix
Season with garlic salt
Add in your cheese, mix and cook until melted
Turn off heat
Season with pepper
Place your croissant onto baking sheet
Cut a slit down the top center of croissant
Gently open to create a bowl for your egg mix
Add in spoonfuls of egg mix into each croissant
Place into oven for roughly 5-7 minutes until golden
Remove and top with your green onions or chives
Serve and enjoy!
