We're already saying yum by just reading the title of this recipe. Nothing better than perfectly cooked crispy potatoes mixed with all you could want in a cheeseburger.
Ingredients
2 cups of potatoes chopped (skin on)
12-14oz os Vegan Ground meat, we used Impossible Meat
1 white onion, finely diced
1 tbsp mustard
2 tbsp ketchup, plus more for serving
2 tbsp of BBQ Sauce
1 tsp of garlic powder
Salt and pepper
3 slices of vegan cheddar or american cheese (We used Miyokos farmhouse)
3 tomatoes, diced
Vegetable Oil
Pickle slices
Sesame Seeds for garnish
Directions
Preheat your air fryer to 400
Toss your potatoes with vegetable oil
Season with salt
Place into air fryer and cook for 16-20 minutes until crispy and golden brown
Shake pan a few times during cooking
While potatoes are cooking prepare your mix
In a large frying pan heat a little oil over medium high heat
Add in half your onion
Saute for 7 minutes
Add in your vegan ground meat
Cook for roughly 8 minutes until almost browned
Add in your garlic powder
Season with salt and pepper
Add in your ketchup, bbq sauce and mustard
Mix well
Add in your cheese
Cook until almost melted
Add in half of your tomatoes
Mix well
Mix in your crispy potatoes and cook for 2 more minutes
Turn off heat
Drizzle with ketchup
Top with remaining tomatoes, onions and pickle slices
Garnish with sesame seeds
Serve and enjoy!
