This isn't your average or ordinary soup. It's packed with tons of flavors and textures. Perfect meal for a cozy weeknight. And the best part it all comes together in less than 30 minutes!
Ingredients
1 14oz package of Beyond Meat Italian Sausage
1 9oz package of Kite Hill Tortellini
1/2 onion diced
2 garlic cloves, minced
2 tbsp butter
1 tbsp flour
1 14oz can of diced tomatoes
1/2 tbsp of Italian Seasonings
4 1/2 cups of water
1-2 tbsp of Tomato Paste
8oz of Cream Cheese
1/4 cup of nutritional yeast
1 tsp crushed red pepper
Pinch of salt and pepper
1 bunch of kale, chopped and stems removed
Olive Oil
Directions
Add a little olive oil to a large Dutch oven or pot and heat to medium high
Using your hands pinch of pieces of sausage links to create sausage crumbles
Cook turning often until starting to brown, roughly 5 minutes
Add in your onion and garlic
Sauté until translucent
Add in your butter
Once butter has melted whisk in your flour
Add your canned tomatoes
Add your 3 bouillon cubes, salt, pepper and Italian seasoning
Mix well
Stir in your water, 1 cup at a time
Add in your tomato paste and cream cheese
Mix until cream cheese has almost melted
Add in your tortellini
Cover and cook for 5 minutes
Stir in your nutritional yeast and crushed red pepper
Add your kale leaves
Cook until leaves have wilted, roughly 1-2 minutes Serve immediately and enjoy!
