A delicious and rich pasta that comes together with a handful ingredients and in less than 20 minutes!
Ingredients
10oz cooked pasta, with 1/4 cup of pasta water saved
2-3 tbsps butter
1 tbsp flour
2 tbsps crushed garlic
1/4 cup lemon juice
1/3 cup of broth
1 cup heavy whipping cream (unsweetened)* we used Silk Heavy Whipping Cream
Salt and pepper
1/3 cup vegan Parmesan plus more for serving
Parsley for serving
Lemon slices for garnish
*if you can find a vegan option you can use 8oz of vegan cream cheese with 1/4 cup of non dairy milk
Directions
Melt your butter in a large pan over medium heat
Add in your flour
Whisk until creamy
Add in your garlic, lemon juice and broth
Mix well
Add in your heavy whipping cream
Stir and cook until thickened
Season generously with salt and pepper
Add in your parmesan
Mix well until creamy
Remove from heat
Add in your cooked pasta and pasta water
Mix well
Top with Parmesan and parsley
Serve with lemon garnish
