A delicious creamy potato soup packed with flavor! Perfect comfort soup!
Ingredients
12oz vegan grounds
3-4 Tbsps vegan butter
1/2 large onion, diced
2 Tbsps minced garlic
4 cups of diced potatoes, I prefer skin on
Salt and pepper
1/2 tbsps dried parsley
1/2 cup flour
3 cups broth (vegan beef)
3 cups of non dairy milk
7oz vegan cheddar cheese shreds
Freshly chopped chives, roughly 3/4 cup
Directions
Heat a large pot to medium
Add in a little vegetable oil
Once hot add in your vegan ground beef
Cook and crumble until browned
Remove from pot
Return pot to heat
Add in vegan butter
Once melted add in your onion
Sauté for 5 minutes until til starting to turn translucent
Add in your garlic
Sauté for 1 minute
Add in your potatoes and parsley
Season generously with salt and pepper
Mix well
Cook for 2-3 minutes
Add in your flour
Toss until potatoes are coated
Add in your broth and plant milk
Mix well and bring to a boil
Cool until potatoes are tender
Once potatoes are soft turn down heat
Add in your vegan cheese
Mix until melted
Return your browned ground meat
Add in 1/3 cup of chives
Mix well
Remove from heat
Taste and season as needed
Serge and garnish each plate with chives
