A delicious, fresh and easy to make dip that comes together in less than 10 minutes! Today we are using Brianne’s strawberry vinaigrette to make it that much easier. If you desire you can use olive oil and red wine vinegar instead.
Ingredients
3 Roma Tomatoes diced
15oz can of black eyed peas, drained and rinsed
15oz can black beans, dried and rinsed
1/2 Red onion, diced
15oz can of corn, drained
1 bell pepper, diced
1 jalapeño, diced
1/2 bunch cilantro, chopped
2 avocados, diced
Salt and pepper
Juice from 1 lemon
3/4 cup of Brianna’s Blush Wine Vinaigrette
Directions
Add first 8 ingredients into a large bowl
Mix well
Add in your avocado
Season generously with salt and pepper
Add your lemon juice and dressing
Gently toss
Refrigerate until ready to use
Serve with tortilla chips
Serve and enjoy
