It’s a taco boat filled with a hot dog covered in cheesy jalapeño cornbread and topped with honey! The moment I saw this recipe I knew I had to make a vegan version asap!
Ingredients
12oz vegan cornbread mix (we used sprouts brand)*
1 cup non dairy milk*
1/2 cup butter, melted*
1 vegan egg (we used 1/4 cup of just egg)*
1-2 cups vegan cheese shreds
1-2 jalapeños, diced
Flour Taco boats
Large vegan hot dogs
Toppings: vegan butter, jalapeño slices and vegan friendly honey or maple syrup
*The ingredients needed to add into cornbread mix may vary by brand
Directions
Preheat oven to 425
In a large bowl add your milk, butter and egg
Whisk well
Add your cornbread mix
Mix well
Add in your cheese and diced jalapeños
Mix well
Place your taco boat on prepared baking sheet
Pour in 1/4-1/3 cup of cornbread mix
Add your hot dog
Top with more cornbread mix
Don’t overfill the boats since the cornbread will rise
Repeat with remaining boats
Spread boats evenly out on baking sheet
Bake in preheated oven for 15 minutes
If flour boats start to brown cover lightly with foil
Remove once cornbread is cooked
Let cool slightly
Top with a thin slice of butter
Add jalapeño slices
Drizzle with honey
Serve and enjoy!
