This pizza is exactly what you should be making right now. A perfect base of Cilantro Pesto, topped with cheese and loaded with Plant Ranch Foods Carne Asada cooked to perfection. Then topped off with fresh tomatoes, hot sauce and a Chipotle Cream. Your family will thank you.
Ingredients
1 package of Plant Ranch Foods Carne Asada
Cilantro Pesto, recipe below
Chipotle Cream, recipe below
6-8 slices of Follow Your Heart Provolone or Mozzarella Slices
2 Tomatoes, diced
Hot Sauce, we used Yellow Bird Serrano
Handful of freshly chopped cilantro
Pizza Dough, feel free to make your own but we love the one from Whole Foods
Directions
Boil your Plant Ranch Foods according to directions
Once heated remove from water and let sit for 5 minutes to cool slightly
Heat a little oil in a frying pan over medium high heat
Remove Carne Asada from its bag and add to your heated pan
Pan fry for roughly 5 minutes
Remove and let cool
Prepare your dough to pizza size of choice
Spread generously with your Cilantro Pesto
Top with your cheese slices, I like to cut each slice into smaller pieces
Sprinkle generously with your prepared Carne Asada
Bake according to directions of your dough
(We cooked ours on a preheated pizza stone on the grill for 12-15 minutes)
Remove Pizza when golden
Top pizza with your freshly chopped tomatoes
Drizzle with hot sauce and chipotle cream
Top with freshly chopped cilantro
Serve and enjoy!
Cilantro Pesto
Ingredients
1/2 cup of toasted slivered almonds
2 bunches of cilantro
1/2 cup of Follow Your Heart Parmesan Cheese Shreds
Juice from 1 lemon
Pinch of salt
3-4 garlic cloves
1/3-1/2 cup of olive oil
1 tsp of serrano peppers, optional
Directions
In a food processor or blender, add your first 6 ingredients
Pulse until well blended
Slowly add in your olive oil with blender running
Blend adding oil until desired consistency is met
Taste and season with more salt if needed
You probably won't use all the pesto in the pizza but good news you can freeze for later use.
Chipotle Cream
Ingredients
1/2 cup of Vegan Sour Cream
3-4 peppers from a 7oz can of Chipotle Peppers in Adobo Sauce
Juice from 1/2 lemon
2 tbsp of water
Pinch of Salt and Sugar
Directions
Blend together all ingredients until creamy
Add more water if too thick
