Nothing says Fall like this pasta! Sausage, Roasted Butternut Squash and Sage...need I say more!

Ingredients
1 butternut squash
14oz ground vegan sausage, we used impossible
2 tbsp crushed garlic
1/2 cup of vegan butter
1/2 cup pasta water
1/2 cup broth
1 cup vegan Parmesan
Salt and pepper
3/4 cup of freshly chopped sage
Oil
10-12oz cooked pasta
Balsamic glaze for serving
Directions
Preheat oven to 400
Peal your butternut squash
Cut in half and remove seeds
Cut into small pieces
Coat with oil and season with salt
Place onto prepared baking sheet and roast for 30 minutes turning pan halfway through
Heat a large skillet over medium heat
Add in a little oil
Crumble in your sausage*
Cook while breaking apart until browned
Add in your garlic and cook for 2 mins
Add in your butter and cook until melted
Add in your cooked pasta, pasta water and broth
Mix well
Add in your butternut squash and sage
Mix well
Stir in your Parmesan
Season with salt and pepper
Serve with balsamic glaze
Enjoy!
*Another way to prepare if you like crispier sausage is to brown sausage, then remove from pan. Continue with rest of recipe and add sausage in when you add squash!
