Broccoli Crunch Salad



A delicious no-cook crunchy broccoli salad that’s super easy to make and absoluetly delicious! 


Ingredients

3/4 cup vegan mayo

2 tbsps Dijon mustard 

3-4 tbsps Apple cider vinegar

3 tbsps maple syrup

2 tsps poppy seeds

Salt and pepper to taste

4-6 cups of broccoli florets, roughly chopped

1/2 red onion, diced

3/4 cup shredded carrot

1/2-3/4 cup dried cranberries

1/2 cup pepitas

(I like a few extra cranberries and pepitas to garnish on top before serving)


Directions

Combine together the first 5 ingredients

Season with salt and pepper whisk well

Set aside

In a large bowl add remaining ingredients

Pour dressing on top

Toss until dressing is mixed in well

Cover and refrigerate for at least one hour

Serve and enjoy
