A delicious hearty Vegan Scramble served in a Sourdough Bread bowl. Not only is this super pretty to serve, it tastes absolutely delicious. And whats better than being able to eat the bowl after it has soaked up all the flavor from the scramble.
Ingredients
4 Small Sourdough Round Bread (Bread Bowls)
2 12oz bottles of Just Liquid Egg
1/2 white onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
1 7.4 oz package of Beyond Meat Spicy Breakfast Sausage
4oz can of diced jalapeno
2 cups of Shredded White Vegan Cheese
Vegetable Oil
Salt and Pepper
1/2 cup freshly chopped cilantro
Directions
Preheat oven to 400
In a large frying pan heat a little oil over medium high heat
Add in your onion
Saute for roughly 5 minutes
Add in your bell peppers
Cook for another 5 minutes
Add in your can of jalapenos
Cook for 1-2 minutes
Add in your sausage patties
Cook on each side for roughly 4 minutes
Breaking the sausage apart as you cook to create crumbles
Cook until golden (don't overcook as they will cook more in the oven)
Season with salt and pepper
Remove from pan and set aside
Return pan to heat
Add in your Just Egg
Scramble until desired egg consistency
Add in your sauted onion and pepper mix
Sprinkle in 1 cup of shredded cheese
Cook until melted
Season with salt and pepper
Hollow out the center of your bread rounds to make a bread bowl*
(I use the tops to make croutons or bread crumbs)
Brush the inside with oil
Place in preheated oven for 5-7 minutes
Remove
Fill each bread bowl with your Scrambled Egg mix
Top each with remaining cheese
Place into oven for roughly 10-15 minutes
Remove once cheese is melted
Garnish with chopped cilantro
Serve and enjoy!
