This is the perfect hearty and delicious summer salad. Loaded with beans, corn, quinoa, bbq sauce and more!
Ingredients
6-8oz of prepared vegan chicken pieces
1 cup BBQ sauce
2-3 cups of cooked Quinoa (I like to cook my quinoa in veggie stock)
1/2 red bell pepper, diced
1/2 small red onion, diced
1 cup of cooked black beans
1 cup of cooked corn
1 jalapeno, diced
1 bunch of cilantro, chopped
Salt
Directions
In a large bowl add your vegan chicken
Add in half your bbq sauce
Mix well
Add in your quinoa, pepper, onion, beans, corn, jalapeño and half your cilantro
Season generously with salt
Add in remaining bbq sauce
Mix well
Marinate in refrigerator for 1-2 hours
Remove from refrigerator
Drizzle with bbq sauce and or ranch
Garnish with remaining cilantro
Serve and enjoy!
