Vegan Bacon Onion Jam


You read right. We made a delicious jam out of onion and vegan bacon. And it is hand down one of the best things we have ever eaten. You have definitely got to try this. You can eat it on crackers, sandwiches, burgers, and even directly out of the jar on a spoon. It's THAT good!

Ingredients

2 cups of chopped sweet or yellow onion

1 package of All Vegetarian Bacon

1/2 cup of brown sugar

1 tbsp of crushed garlic

1 tsp of liquid aminos

1/4 cup of maple syrup

1/4 cup apple cider vinegar

Vegetable Oil

Directions

In a large sauce pan add a good amount of vegetable oil (roughly 1/4 cup)

Heat over medium high heat

Chop your bacon into tiny pieces

Add bacon to oil and cook for 10-15 minutes until browned

Remove cooked bacon from oil and set aside

Turn heat to medium

Add your chopped onion to the pan, into the bacon oil

Cook for 30-40 minutes stirring often

(Cook your onion until caramelized. Times may vary. It can take almost 45 minutes sometimes so just keep cooking and add more oil if necessary.)

Once onions have caramelized add your cooked bacon pieces to the onions

Cook together an additional 3-4 minutes

Add in your brown sugar, apple cider vinegar, maple syrup, garlic and liquid aminos

Mix well

Continue to cook until mix begins to thicken, stirring often, roughly 20 minutes

Turn off heat and let cool

Place into a jar to use, best to be used at room temperature so once you refrigerate is, take it out a little before using.
