Bake these on a weekend morning and your house will smell delicious and the muffins will be gone before you even have time to put them in s tightly sealed containers
Makes roughly 12 Muffins
Ingredients
4-5 Really Ripe Bananas, the more brown spots the better
1/3 cup of melted butter
1 Vegan Egg (I used Bobs Red Mill Egg Replacer)
2/3 cup of white sugar
1 tsp of baking soda
Splash of vanilla
Pinch of Salt
1.5 cups of All Purpose Flour
1 cup of Vegan Friendly Chocolate Chips (I used Enjoy Life)
12 Muffin tin tray, or 6 tin tray just bake twice
Directions
Preheat oven to 350
Mash your bananas in a large bowl
Mash until there are no clumps
Add in your melted butter and mash the melted butter into the bananas
Mash until creamy
Add in your prepared vegan egg, sugar and vanilla
Stir until well mixed
Stir in your salt and baking soda
Add in your flour and stir until mixed (don't over mix)
Gently fold in your chocolate chips
Spray your Muffin pan with baking spray
Pour spoonfuls into muffin tins
Bake until gold and toothpick comes out clean, roughly 18-20 minutes
Remove
Serve and enjoy!
