Cheesy Potato Taco Casserole


Was craving Tacos, but also had some potatoes I needed to use. So decided to throw them together to create this incredible dish. Try not to eat the whole thing at once.

Ingredients

1 package of Impossible Meat

1.5 lbs of petite gold potatoes, chopped into thirds

1/2 Onion, Diced

1.0 oz package of taco or fajita seasoning

10 oz can of diced tomatoes and green chilies

1/3 cup of water

1/2-1 cup of Follow Your Heart shredded cheese, I used Cheddar Shreds

1/3 cup of water

Vegetable Oil

Salt and Pepper

Chopped Green Onions for Garnish

Directions

Preheat oven to 425

Toss your chopped potatoes in a little oil and season with salt

Place onto prepared baking sheet and bake for 30-40 minutes

Turning half way through

While potatoes are cooking prepare your 'meat'

In a medium to large frying pan heat roughly 2 tbsp of oil over medium high heat

Add in your onion and saute for a few minutes until translucent

Add in your impossible meat and cook for 5-7 minutes until starting to brown

Add in your fajita or taco seasonings, diced tomatoes and chilies and water

Mix well

Cook down for an additional 5-7 minutes until most liquid is absorbed

Turn off heat

Once potatoes are done remove from oven

Turn oven down to 400

In a 9' pie pan or casserole dish add spray with cooking spray

Add in your potatoes

Top with meat mix and cheese

Roughly mix together

Place pan into oven

Bake for 15-20 minutes

Remove and let sit for 5 minutes

Garnish with green onions

Serve and enjoy!
