A Reuben sandwich is always a good idea. But you can't always share your sandwich. So today we're making something you can share, only if you want to, Reuben Monkey Bread. With a few simple ingredients, thrown into a bundt pan, baked and topped with a delectable sauce. You're Reuben Sandwich may be a thing of the past.
Ingredients
1 8-10 oz package of Seitan or Vegan Chicken (If using frozen, thaw)
1 can of Beets, Juice only
2 tbsp of red wine vinegar
1 Roll of Pillsbury Pizza dough or 2 Crescent Roll Packages
1/2 cup of melted butter
2 tbsp of nutritional yeast
1 8oz bag of Follow Your Heart Shredded Mozzarella
1 tbsp of Caraway or Fennel Seeds
3/4 cup of Sauerkraut, plus 1/4 for serving
1 bottle of Follow Your Heart Thousand Island (or make your own, recipe below)
Salt and Pepper
Directions
Chop your seitan or chicken into thin small pieces
Place your seitan or chicken in a container with a lid
Add in your beet juice and vinegar
Season with salt and pepper (A pinch of salt and a generous amount of pepper. You can even add in peppercorns if your willing to pick each one out before cooking)
Mix together with a spoon
Place on your lid and shake to make sure everything gets mixed well
Marinate in refrigerator for at least 1 hour
When ready to make monkey bread, pre-heat oven to 400 (Or heat as directed by your dough)
In a large mixing bowl take out your dough and pinch into small pieces and then roll into a small ball (roughly 1/2-3/4 inch thick)
Place into bowl
Repeat with remaining dough
Mix your melted cooled butter with nutritional yeast
Pour over rolled dough balls
Remove your vegan meat from liquid and place into bowl
Add in your caraway or fennel seeds
Followed by your cheese and sauerkraut
Using your clean hands
Carefully mix everything together
Spray your bundt pan generously with cooking spray or oil
Carefully add your monkey bread mix evenly into prepared baking pan
Bake in preheated oven for 45 minutes
After 20 minutes check on the bread and turn oven down to 375
(Ovens and dough may vary and so will cooking time)
After the 20 minutes check again after 10
Monkey bread is done when it's puffy and crisp on the top. Stick a toothpick into the thickest part to make sure it comes out clean (besides cheese and butter)
When done remove from oven
Let sit for 10 minutes
Carefully flip over onto plate or platter
Drizzle generously with your dressing and top with remaining sauerkraut

Ingredients
1 cup of Follow your Heart Vegenaise
1/3 cup of ketchup
1/4 cup of relish
Splash of vinegar
Mix together well
