Cherry Ripe is a brand of chocolate bar manufactured by Cadbury Australia. It consists of cherries and coconut coated with dark chocolate. They are unfortunately NOT Vegan. And when I went to Australia a few years ago I was Vegan so I never was able to try them so I cant speak for myself but I had a few Australian family and friends try them and they said they were just like the real thing. Even if you have never heard of Cherry Ripe you should definitely give this recipe a go!
Ingredients:
10 oz of Enjoy Life Chocolate Chips
8.8 oz of shredded coconut (Roughly 3 cups)
10 oz of sweetened condensed coconut milk (I used Natures Charm)
8 oz of glace cherries (candied cherries) chopped finely
Directions:
In a large bowl add your chopped cherries, coconut and condensed milk
Mix well (this will be sticky, this will be messy)
Form into small, bite sized balls
Place onto prepare sheet (lined with wax paper or greased)
Place into freezer or fridge to set (I did the freezer for 1 hr)
Once hard remove
Melt your chocolate according to directions
Using a chopstick press tip of stick into the coconut ball
Then using the chopstick as a stick press ball into melted chocolate to fully coat
(You can also use two spoons to get the coconut ball fully coated)
Remove from chocolate and place onto fresh wax paper or baking tray
Carefully remove chopstick and press around chocolate to cover stick hole
Repeat with remaining balls, heating up chocolate as necessary
Place into refrigerator to fully set for a few hours
Serve and enjoy
Store leftovers in a container with a lid, in the fridge
