Lets get to cooking..
Ingredients:
1.5 cups of all purpose flour p
1.5 prepared Vegan Eggs
2 cups of your favorite light tropical type beer
1/4 cup sugar
Pinch of salt
2 cups shredded coconut
Coleslaw for plating (Recipe below)
Mango Chutney for serving (you can use sweet chili sauce as well)
All Vegetarian Vegan Shrimp
Oil for frying
Directions:
In a large bowl add your prepared vegan eggs
Add in 1 cup of Flour (reserve rest for later)
Follow by your Beer, Salt and Sugar
Whisk together to form batter (If too thick add more beer, if too thin add more flour. You want it to be thicker than pancake batter)
Take your Vegan shrimp and dredge in flour
Followed by the batter
After placing in batter place onto a plate
Continue with remaining shrimp
Once all shrimp is coated with batter lets coat with coconut
Press each batter coated shrimp into the coconut and press firmly around the shrimp to tightly coat
Place onto a plate and prepare with remaining shrimp
Heat your oil in a stock pot or deep fryer
Place your shrimp into hot oil a few pieces at a time (Do not overcrowd)
Fry until golden
Remove and drain on paper towel
Repeat with remaining shrimp
To plate:
Spoon a generous amount of your chutney or chili sauce onto a plate
Top with fried shrimp
Add your slaw onto the side
Serve and enjoy!
Coleslaw:
1 cup shredded cabbage
1/4 cup shredded jicama
1/4 cup shredded carrots
1/3 cup of lime juice
1 tbl of oil of choice
Salt and White Pepper
Directions:
Whisk together your lime juice, oil and a pinch of salt and pepper
Add your coleslaw, jicama, and carrots together
Pour sauce over and mix well
