Breakfast Bagel Sandwich


One incredibly loaded Breakfast sandwich. With an insanely delicious Tofu Chickpea Scramble, made using crumbled tofu, chickpea flour and veggies and vegan sausage.

Made these on New Years Day and my Non Vegan family was loving every bite!

Ingredients:

12-16oz of Heirloom Cherry or Grape Tomatoes

1/2 onion, diced

16oz of mushrooms, sliced

1 package of Lightlife Gimme Lean Ground Sausage

16oz of frozen spinach, prepared and moisture removed

1 block of firm tofu, moisture pressed out

2 tbl of liquid aminos

1 rounded cup of Bobs Red Mill Chickpea Flour

1 cup of Follow Your Heart shredded cheddar cheese

1 cup of Follow Your Heart shredded mozzarella

Olive oil

Earth Balance Butter

1tsp of paprika

2 tsps of turmeric

Salt and Pepper

Directions:

Preheat oven to 400

Toss your tomatoes with a little olive oil and bake in preheated oven for roughly 15 minutes until roasted (shaking pan a few times during cooking)

In a large frying pan add a little oil

Add in your onions and saute for roughly 5-7 minutes, turning often

Add in your mushrooms and cook for an additional 5 minutes

Remove from pan and set aside

Return pan to heat

Add in more oil and crumble in our sausage

Cook Sausage for roughly 7 minutes, breaking apart as your cooking it

Cook until browned

Add in your mushroom mix

Followed by Spinach

Crumble in your Tofu

Mix well

Add in your liquid aminos, paprika, turmeric, and salt and pepper

Mix well

Add in your roasted tomatoes

In a medium bowl whisk together 1 cup of Beef-less broth, Chickpea flour, and nutritional yeast

Adding more broth if too thick (should be a similar to pancake mix)

Once combined and there are no lumps pour into your pan

Mix well

Cook for 5 minutes

Stir in both your cheeses

Turn off heat

Pour mixture into a large prepared baking pan

Turn oven to 375

Place pan into oven and cook for 30-35 minutes

If top is browning too quickly cover with foil halfway

Once your mixture if firm remove from oven

Let cool for 5 minutes

Prepare your sandwiches

Bubbas Mini Bagels

Follow Your Heart Chipotle Vegenaise

Onions

Tomatoes

Avocado

If you're feeling really wild, add breakfast potatoes
